  • 24 cherry tomatoes
  • 16 wooden skewers

Instructions

Prepare the Pesto:

In a food processor, pulse basil, garlic, Parmesan cheese, salt, and pepper until smooth. Slowly add the olive oil while pulsing to create a smooth pesto sauce.

Marinate the Chicken:

Combine the raw chicken cubes with the prepared pesto in a bowl. Allow the chicken to marinate for a few hours to absorb the flavors.

Prepare the Skewers:

Soak the wooden skewers in water for at least 30 minutes to prevent them from burning during grilling. Alternatively, you can use metal skewers.

Assemble the Kebabs:

Thread the marinated chicken cubes and cherry tomatoes onto the skewers, beginning and ending with chicken to ensure even cooking. Repeat this process to make 8 kebabs in total.

Preheat the Grill:

Heat your outdoor grill or indoor grill pan over medium heat until hot. Ensure that the grates are clean and lightly spray them with oil to prevent sticking.

Grill the Kebabs:

Place the assembled kebabs on the hot grill and cook for about 3-4 minutes on each side, or until the chicken is cooked through and the tomatoes are slightly charred. This should take approximately 2 to 3 minutes per side.

Serve:
