Instructions
- Season the Roast: Rub the beef eye round roast with salt and pepper to taste. Drizzle one teaspoon of olive oil in a casserole dish and spread it around to cover the area where the roast will sit.
- Prepare the Vegetables: In a bowl, combine the cherry tomatoes, peeled garlic cloves, dried thyme, and two tablespoons of olive oil. Mix well to coat the vegetables evenly.
- Assemble in Casserole Dish: Place the seasoned roast in the casserole dish, directly over the oiled area. Spread the tomato and garlic mixture around the roast.
- Marinate Overnight: Cover the casserole dish and place it in the refrigerator overnight. This allows the flavors to meld and the meat to absorb the seasoning.
- Cold Oven Method: The next day, place the casserole dish with the roast in the center of a cold oven. Set the oven to 350 degrees Fahrenheit.
- Cook the Roast: Cook the roast for about 1 hour and 30 minutes, or until it reaches your desired level of doneness. Use a meat thermometer to check the internal temperature:
- 125°F for rare
- 135°F for medium-rare
- 145°F for medium
- Rest and Carve: Once cooked, remove the roast from the oven and let it rest for at least 10 minutes before carving. This helps the juices redistribute throughout the meat, ensuring a juicy and flavorful roast.
- Serve: Slice the roast beef and serve it with the roasted tomatoes and garlic. Enjoy!

Letting the roast marinate overnight enhances the flavor, but if you’re short on time, a few hours will still produce a delicious result.
